Raspberry Ice Cream

Ingredients
  • 16 ounces frozen raspberries
  • 1 can coconut milk
  • 3/4 cup sugar
  • about 1 tbsp oil (to oil measuring cup)
  • 1/4 cup corn syrup
  • 1/2 box aseptic silken tofu
  • 3 tbsp vodka
  • 2 tbsp lecithin granules
  • 1 tsp vanilla
  • pinch salk
  • 1 tbsp tapioca powder
  • 1/8 tsp xanthan gum
Instructions
  • Heat sugar with coconut milk "water" in a sauce pan, until dissolved.
  • Dissolve lecithin with vodka.
  • Thaw berries.
  • Mix all ingredients in a food processor until smooth.
  • Chill overnight.
  • Make ice cream according to your ice cream maker's instructions.
