Spicy Roasted Cauliflower

I had a cauliflower that needed to be eaten and I just happened to run across this recipe today, for cocoa covered cauliflower. Looked good, so I searched online to get some idea of spice amounts per one head of cauliflower and came up with the following "spice rub" ... it was really good, though it was crying out to be added to roasted cashews or peanuts!

We had this with mashed potatoes and meatloaf ... I thought these three made a pretty good flavor combination.

Ingredients:
  • 1 small head of cauliflower, chopped into florets
  • 3 tbsp oil
  • 2 tbsp sesame seeds
  • 1 tbsp nutritional yeast
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tsp unsweetened cocoa powder
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp ground corriander
  • 1/4 tsp red pepper
  • salt and black pepper
Instructions:
  1. Preheat oven to 425 degrees
  2. Mix together dry ingredients.
  3. Add oil and make a paste.
  4. Coat cauliflower and place in a 9 * 13 inch baking dish.
  5. Bake for 25-30 minutes or until cauliflower is acceptably done.
