Seitan Sausage Crumbles

This is a variation of Italian Seitan Crumbles, without so much "Italian" flavor. These would be tasty in gravy or with breakfast meals.

Ingredients:

  • 1 box wheat gluten (1 1/2 cups)
  • 6 tbsp nutritional yeast
  • 2 tbsp garbanzo flour
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp ground fennel
  • pinch marjoram
  • 1 tsp ground sage
  • 1/4 tsp dry mustard
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp A1
  • 1 tbsp soy sauce
  • 3 tbsp oil
  • 11 tbsp "marmite water" - see notes on original recipe

Instructions:

  1. Combine dry ingredients.
  2. Add liquid and combine. This is easy to mix my hand. Mix until just combined - no need to knead.
  3. Pinch into small crumbles.
  4. Brown in oil and soy sauce for approximately 10 minutes.
  5. I like to further cook by baking in the oven. Approximately 20-30 minutes around 250 degrees. Cook until you're happy with their done-ness and texture.
