Blueberry Ice Cream

Ingredients
  • 14 ounce can full-fat coconut milk
  • 1/2 box silken aseptic tofu
  • 2 1/2 tbsp vodka
  • 2 tbsp soy lecithin granules
  • 3/4 cup corn syrup
  • 1/4 cup granulated sugar
  • 1/2 tsp vanilla
  • approximately 15 ounces organic blueberries
  • pinch salt
  • 1 tbsp tapioca starch
  • 1/8 tsp xanthan gum
Instructions
  1. Dissolve lecithin in vodka.
  2. Blend all ingredients together until smooth.
  3. Chill in refrigerator overnight.
  4. Make according to your ice cream maker's instructions.
