Mock Ham Salad
With class on Wednesdays, and usually enough leftovers from Tuesdays, I don't envision Wednesday vegan mofo blogging but I did whip up some salad for lunch, so what's a few pictures and a short blog post?
My typical chicken salad recipe can be found here. Today, I added a generous amount of Frontier Bacon Bits and used a little bit of tempeh, but mostly chickpeas and adzuki beans (because I had some cooked from last night's chili) so this salad had more bacon flavor and darker color.
Super-quick, easy and a satisfying lunch, on a few pieces of toast from the last bread I made.
All it needed was a little spinach. And a Diet Coke.
